Humidities drying
With dry wood, lighten a not too intense fire. Allow time to cool while the oven dampens, until it gets dry. The drying time of the humidities varies according to the season. More in winter, less in summer … If there are no exterior dampnesses, just follow the dot indications.
Heating
If there is not, or as soon as there is no humidity remaining on the outside of the oven, keep a fire burning, only and only for the time necessary for the clay oven inside to stay warm and greyish. It is usually the ideal spot to cook. The time usually required for the oven to be ready to cook varies from 45m to 1h (depending on oven size and season).

The clay ovens are the best option to cook the wood thanks to its high capacity of conservation of the heat which also allows the best quality of the food.
